beetsThis Week's C.S.A. Share

peas The second half of June is one of those wonderful times in the garden where two seasons overlap.  Spring flows into summer and creates some unique and short-lived opportunities in the kitchen.  Peas, which we think of as a spring crop, come into season this week and last only a little ways into July.  Zucchini, one of the staples of summer, is just beginning to produce.  We still have all the spring greens and radishes, but we start to have baby beets and carrots, spring onions, radicchio, cabbages, basil, parsley.  Garlic scapes are emblematic of this time of year.  Spring is nice and all, but in late June we get a taste of the diversity to come.  So many firsts.  What better invitation to the kitchen?

You’ll find lots of our favorite recipes for arugula and beets on their respective Vegetable Pages. Sugar snap peas don't require a recipe - just snack on them like candy, serve with hummus or your favorite dip, or toss into a stir fry. Hint: For beet green recipes try anything under swiss chard; for scallion recipes visit the onion page, for zucchini see summer squash. and for basil see herbs.
