Pea Shoots

Store pre-washed and spun greens in a ziplock bag or plastic container lined with a dry paper towel in the refrigerator for up to 1 week. Excess moisture causes rot. Will perish more quickly if stored wet in a plastic bag.

Recipes

Pea Shoots and Shiitakes

  • 1 bunch pea shoots
  • 1/2 lb shiitake mushrooms, halved or quartered if large
  • 2 Tbsp canola oil
  • 2 cloves garlic, minced
  • 2 scallions, cut into 1 inch lengths
  • 2 Tbsp soy sauce
  • 1 tsp sesame oil

This is a quick and easy stir fry for pea shoots.  You can substitute any kind of meat or tofu for the mushrooms, but use locally grown shiitakes if you can get them. Heat the canola oil in a saucepan and add garlic. Sautee until golden and add mushrooms.  Continue to stir fry over high heat until the mushrooms are cooked, about 5 minutes.  Add scallions, stir briefly, and then toss in the pea shoots.  Stir until wilted, about 1 minute, and add the seasonings.  Serve immediately with rice.
